“Venus Bites”

(because they are so delicate and inviting that even the goddess of beauty would love them!)

Ingredients:

  • Good quality bresaola, thinly sliced
  • Fresh ricotta cheese (about 250g)
  • Liquid honey (acacia or wildflower)
  • Fine salt
  • Freshly ground black pepper
  • Fresh chives (optional, for garnish)

Preparation:

  1. Prepare the filling: In a bowl, mix the ricotta with a pinch of salt, a grinding of black pepper and a teaspoon of honey. Taste and adjust the seasoning to your liking. If you like, you can also add some finely chopped chives.
  2. Assemble the “tortelli”: Arrange the slices of bresaola on a cutting board. In the center of each slice, place a teaspoon of ricotta filling. Fold the slices in half, forming small bundles or “tortelli”.
  3. Garnish and serve: Arrange the Venus Bites on a serving plate. Drizzle with a little honey and, if you like, decorate with a few chives. Serve immediately as a fresh and delicious appetizer.

Tips:

  • For an even more refined touch, you can use truffle honey.
  • If you want to prepare the bites in advance, store them in the refrigerator covered with plastic wrap. Take them out of the fridge at least 30 minutes before serving.
  • You can accompany the bites with toasted bread croutons or fresh fruit, such as figs or pears.

Variations:

  • You can enrich the filling with chopped walnuts or pistachios.
  • Instead of ricotta, you can use other creamy cheeses, such as goat cheese or robiola.
  • For a touch of color, you can add pieces of dried tomatoes in oil to the filling.
