Heartwarming Irish Potato, Leek, and Cabbage Bowl Soup

Ingredients:
2 tablespoons olive oil
1 large onion, chopped
3 leeks, sliced
3 large potatoes, peeled and diced
1/2 head of cabbage, chopped
4 cups vegetable broth
2 cups water
1 teaspoon salt
1/2 teaspoon black pepper
1 cup heavy cream
Chopped fresh parsley for garnish
Directions:
Heat the olive oil in a large pot over medium heat. Add the onion and leeks and sauté until softened, about 5 minutes.
Add the diced potatoes, chopped cabbage, vegetable broth, and water to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 20 minutes.
Use an immersion blender to partially blend the soup for a chunky texture, or blend completely for a smoother consistency.
Stir in the salt, black pepper, and heavy cream. Heat through.
Serve hot, garnished with chopped fresh parsley.
