Pineapple Char Siu Pulled Pork Sliders

Ingredients:

For the pineapple char siu pulled pork:
1/3 cup hoisin sauce
1/3 cup pineapple juice
3 tablespoons soy sauce
3 tablespoons honey
1 teaspoon sesame oil
1/2 teaspoon Chinese five spice
1 tablespoon garlic, grated
1 tablespoon ginger, grated
1 tablespoon chili sauce (such as samba oelek or sriracha) or to taste
1 (3 pound) pork butt or shoulder
2 cups pineapple, cut into small pieces
For the simple ‘slaw’:
4 cups red cabbage, shredded
2 tablespoons lime juice or rice vinegar
1 teaspoon fish sauce or soy sauce
1 teaspoon sesame oil
For the sliders:
12 King’s Hawaiian Hawaiian Sweet Rolls, halves and toasted or grilled
12 chunks pineapple
1 bunch green onions, sliced
Directions:

For the pineapple char siu pulled pork:
Mix all of the ingredients up to the pork butt, place the pork butt into the slow cooker, top with half of the sauce and the pineapple and cook on low of 8+ hours.
Remove the pork from the slow cooker, trim the fat, shred the pork and mix in the remaining sauce and enough of the juices from the slow cooker to make the pulled pork nice and juicy.
For the simple ‘slaw’:
Mix everything.
For the sliders:
Top the bottom buns with the pineapple chunks followed by the pulled pork, slaw, green onions and the tops of the buns and enjoy!
