Ingredients:
For Lemon Cookies:
- 2 1/4 cups of all-purpose flour
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 cup of granulated sugar
- 1 cup of softened unsalted butter
- 1 large egg
- 2 tablespoons of lemon zest
- 1 1/2 tablespoons of lemon juice
- 1 teaspoon of vanilla extract
For Lemon Icing: - 1 1/2 cups of powdered sugar
- 1 1/2 tablespoons of lemon juice
- 1 1/2 tablespoons of milk
- 2 tablespoons of lemon zest
Instructions:
- Preheat your oven to 350 degrees Fahrenheit. Line your baking sheets with parchment paper or silicone baking sheets.
- In a bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set this mixture aside.
- Cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy. You can use a stand mixer or a hand mixer set to medium speed for this step.
- Reduce the mixer speed to low. Add the egg, lemon zest, lemon juice, and vanilla extract to the butter-sugar mixture. Mix until all the ingredients are just incorporated.
- Gradually add the flour mixture to the butter mixture in three parts, mixing on low speed until everything is well combined.
- Using a 1 1/2 tablespoon cookie scoop, place dough balls onto the prepared baking sheets, leaving about 2 inches of space between each one.
- Bake the cookies for 10-12 minutes or until the edges are just lightly browned. Once baked, transfer the cookies to cooling racks to cool completely.
- While the cookies are cooling, prepare the lemon icing. In a small bowl, whisk together the powdered sugar, lemon juice, milk, and lemon zest until you get a smooth icing consistency.
- Once the cookies are fully cooled, ice them generously with the lemon icing. Place the iced cookies back onto the cooling racks to allow the icing to set.
