Baked pasta with mushrooms, sausage and peas is a rich and tasty dish, perfect for a family lunch or a dinner with friends. Here is a simple recipe to prepare it:

Ingredients:

  • 400g of short pasta (penne, rigatoni, etc.)
  • 300g of sausage (preferably sweet or spicy depending on taste)
  • 200g of mushrooms (champignons or porcini mushrooms, fresh or frozen)
  • 150g of peas (fresh or frozen)
  • 1 small onion, chopped
  • 400g of tomato puree
  • 200g of mozzarella (or other stringy cheese)
  • 100g of grated parmesan
  • Extra virgin olive oil
  • Salt and Pepper To Taste.
  • A pinch of nutmeg (optional)
  • Fresh basil or parsley for garnish (optional)

Preparation:

  1. Preparation of the sauce: In a large pan, fry the chopped onion in a drizzle of extra virgin olive oil until it becomes transparent. Add the crumbled sausage and cook until golden brown. Add the sliced ​​mushrooms and cook for about 5-7 minutes. Add the peas, salt and pepper and cook for another 5 minutes. Pour the tomato puree, season with salt and pepper and, if desired, add a pinch of nutmeg. Let the sauce cook over medium-low heat for about 20 minutes.
  2. Cooking the pasta: In the meantime, cook the pasta in abundant salted water following the instructions on the package but stopping 2-3 minutes before the indicated time to obtain al dente cooking. Drain the pasta and cool it under cold water to stop cooking.
  3. Combination of ingredients: Take a large bowl and mix the pasta with the prepared sauce, half the grated parmesan and half the diced mozzarella. Make sure the pasta is well covered in the sauce.
  4. Baking: Transfer the mix into a baking tray previously greased with oil. Sprinkle the surface with the remaining parmesan and the remaining mozzarella cubes. Bake in a preheated oven at 200°C for approximately 20-25 minutes or until the surface becomes golden and crispy.
  5. Serve: Let the baked pasta rest for 5 minutes before serving. Garnish with fresh basil or chopped parsley for a touch of freshness and color.
