Ingredients:
- 400g of short pasta (penne, rigatoni, etc.)
- 300g of sausage (preferably sweet or spicy depending on taste)
- 200g of mushrooms (champignons or porcini mushrooms, fresh or frozen)
- 150g of peas (fresh or frozen)
- 1 small onion, chopped
- 400g of tomato puree
- 200g of mozzarella (or other stringy cheese)
- 100g of grated parmesan
- Extra virgin olive oil
- Salt and Pepper To Taste.
- A pinch of nutmeg (optional)
- Fresh basil or parsley for garnish (optional)
Preparation:
- Preparation of the sauce: In a large pan, fry the chopped onion in a drizzle of extra virgin olive oil until it becomes transparent. Add the crumbled sausage and cook until golden brown. Add the sliced mushrooms and cook for about 5-7 minutes. Add the peas, salt and pepper and cook for another 5 minutes. Pour the tomato puree, season with salt and pepper and, if desired, add a pinch of nutmeg. Let the sauce cook over medium-low heat for about 20 minutes.
- Cooking the pasta: In the meantime, cook the pasta in abundant salted water following the instructions on the package but stopping 2-3 minutes before the indicated time to obtain al dente cooking. Drain the pasta and cool it under cold water to stop cooking.
- Combination of ingredients: Take a large bowl and mix the pasta with the prepared sauce, half the grated parmesan and half the diced mozzarella. Make sure the pasta is well covered in the sauce.
- Baking: Transfer the mix into a baking tray previously greased with oil. Sprinkle the surface with the remaining parmesan and the remaining mozzarella cubes. Bake in a preheated oven at 200°C for approximately 20-25 minutes or until the surface becomes golden and crispy.
- Serve: Let the baked pasta rest for 5 minutes before serving. Garnish with fresh basil or chopped parsley for a touch of freshness and color.
