Tomato Coconut Curry with Sourdough Pita

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Servings: 4 servings

Ingredients:
2 garlic cloves
Small knob of ginger
2–3 tablespoons of coconut oil
1-2 chilies
1 teaspoon of curry powder
2 large tomatoes
1 cup of coconut milk
½ pack of frozen spinach (fresh works well too)
1 pack of asparagus
Salt & lime to taste

Instructions:

  1. Prep Aromatics
    Rough chop the garlic & ginger.
    Add coconut oil to a pan & sauté ginger & garlic.
  2. Spice Infusion
    Rough chop the chilies & add them to the pan.
    Sprinkle in curry powder & let it bloom for 1–2 mins.
  3. Tomato Magic
    Chop up the tomatoes & add to the pan.
    Cook for 5 mins to break down into a sauce.
  4. Creamy Goodness
    Pour in the coconut milk & add the frozen spinach.
    Simmer for 3 mins.
  5. Green Elegance
    Chop the asparagus into 2-inch long pieces & cook for 2 minutes in the curry.
  6. Season to Perfection
    Add salt and lime to taste.
    Let it cook down & serve with rice or bread.
