THE EXPERIENCE
He is the chef of records. From bronze, silver and gold medals at the Bocuse d’or (practically the chefs’ Olympics), to being, at the moment, the chef of the only restaurant with the highest Michelin rating, moreover located on the eighth floor of the complex that houses the beautiful Copenhagen stadium. He is Rasmus Kofoed, spokesman for a lucid and dynamic cuisine, which we had the opportunity to try declined in the Autumn Universe, the tasting menu dedicated to autumn.
No one has the same perception of perfection, it is in fact a concept that varies too much depending on everyone’s sensibility and taste. But here at the Geranium it can be said, without fear of contradiction, that everything revolves to perfection. Beginning with the dining room, which is also dynamic and perfectly oiled, so much so that it conveys serenity to guests, who during the evening will hardly remember that at the end of the room there is a completely open kitchen (to be clear, there is not even glass to act as a divider), where fifteen cooks plus interns work silently. Except that they are often the ones who present the dishes to the guests: “Before the renovations four years ago, the kitchen was slightly shifted to the left and visible from only four tables, after which it was put in the center of the room and tables were removed to gain space and give the chefs a chance to tell and narrate a bit,” explained Mattia Spedicato, who over time became sommelier and then assistant manager of the restaurant, who if you are not exactly fluent in English will help you understand the most daring ingredients. To have lunch or dinner at Geranium you can only make reservations online with a deposit of 750 Danish kroner (roughly 100 euros), keeping in mind that reservations are opened 90 days in advance of the opening of the various seasonal menus. Once the online procedure is done, the reservation is only successful if you receive the confirmation email. In addition to the regular tables, the restaurant provides the Fireplace Table bookable for groups of up to six people and via email, or the Inspiration Kitchen for larger groups, a stand-alone room complete with another open kitchen. This space is also home to the cellar where they ripen meats and ferment vegetables. Once seated, you can try one of four seasonal menus: on our current visit there was the Autumn Universe, which features six appetizers, nine main dishes-in which workhorses appear, such as the marbled hake we explain below, and the bread course-and five desserts. How much does it cost? 2,600 Danish kroner, roughly 350 euros, which taking into account the ingredients used, the study behind each dish and the welfare of the staff (employees here have three days of recuperation) is not a lot at all. And for those who were wondering, you don’t go out hungry! You can then choose from five different pairings, four with wines and one with juices.
