Ingredients:
- 1 kg of ripe tomatoes
- 500 g of sweet onions
- 500 g of red and yellow bell peppers
- 4 tablespoons of extra-virgin olive oil
- Salt and pepper
Instructions:
- Peel the tomatoes and remove the seeds. Chop them into small pieces.
- Cut the onions into thin slices.
- Cut the bell peppers into thin strips.
- Heat the olive oil in a large pan over medium heat.
- Add the onions and cook until they become soft and translucent, stirring occasionally.
- Add the bell peppers and continue cooking for about 10 minutes.
- Add the tomatoes, salt, and pepper, and cook for about 30 minutes, stirring occasionally until the friggione has thickened.
- Serve hot or at room temperature, as a side dish or as a topping for crostini or bruschetta.
