Friggione is a traditional dish from Emilia-Romagna, Italy, made with tomatoes, onions, and peppers. Here’s a recipe for friggione:

Ingredients:

  • 1 kg of ripe tomatoes
  • 500 g of sweet onions
  • 500 g of red and yellow bell peppers
  • 4 tablespoons of extra-virgin olive oil
  • Salt and pepper

Instructions:

  1. Peel the tomatoes and remove the seeds. Chop them into small pieces.
  2. Cut the onions into thin slices.
  3. Cut the bell peppers into thin strips.
  4. Heat the olive oil in a large pan over medium heat.
  5. Add the onions and cook until they become soft and translucent, stirring occasionally.
  6. Add the bell peppers and continue cooking for about 10 minutes.
  7. Add the tomatoes, salt, and pepper, and cook for about 30 minutes, stirring occasionally until the friggione has thickened.
  8. Serve hot or at room temperature, as a side dish or as a topping for crostini or bruschetta.

Enjoy your Friggione cold on a thick crunchy slice of bread and a sausage that will be amazing!!!!! Or cook it with eggs a sort of Uova Rancheros!!!
