Ingredients:
- 12 squash blossoms
- 200 g mozzarella cheese
- 4 anchovies in oil
- 1 egg
- 150 g flour
- 200 ml sparkling water
- Peanut seed oil for frying
- Salt to taste
Preparation:
- Wash the squash blossoms gently and pat them dry with a clean tea towel.
- Cut the mozzarella into cubes and chop the anchovies.
- In a bowl, combine the mozzarella and chopped anchovies and mix.
- Fill each squash blossom with the mozzarella and anchovy mixture, gently close the ends of the petals, and refrigerate for at least 30 minutes.
- In a large bowl, beat the egg with a pinch of salt.
- In another bowl, mix the flour with the sparkling water and a pinch of salt.
- Heat the oil in a fairly deep frying pan.
- Dip the stuffed squash blossoms first in the beaten egg, then in the flour and water batter.
- Fry the squash blossoms until golden brown, drain on paper towels and serve while still hot.
