Fried squash blossoms are a delicious specialty of Italian cuisine. Here is a simple and tasty recipe to prepare them:

Ingredients:

  • 12 squash blossoms
  • 200 g mozzarella cheese
  • 4 anchovies in oil
  • 1 egg
  • 150 g flour
  • 200 ml sparkling water
  • Peanut seed oil for frying
  • Salt to taste

Preparation:

  1. Wash the squash blossoms gently and pat them dry with a clean tea towel.
  2. Cut the mozzarella into cubes and chop the anchovies.
  3. In a bowl, combine the mozzarella and chopped anchovies and mix.
  4. Fill each squash blossom with the mozzarella and anchovy mixture, gently close the ends of the petals, and refrigerate for at least 30 minutes.
  5. In a large bowl, beat the egg with a pinch of salt.
  6. In another bowl, mix the flour with the sparkling water and a pinch of salt.
  7. Heat the oil in a fairly deep frying pan.
  8. Dip the stuffed squash blossoms first in the beaten egg, then in the flour and water batter.
  9. Fry the squash blossoms until golden brown, drain on paper towels and serve while still hot.
