INGREDIENTS
4 eggplants;
100 g breadcrumbs;

Salt, pepper;
1 chili pepper;
5/6 fresh basil leaves;
Extra virgin olive oil.
Wash, dry, peel and slice eggplant not too thinly;
After that I put the eggplant slices in a colander with salt and let them rest for about 30 minutes;
In a bowl pour the oil add the salt, pepper, chili pepper and mix with a fork;
In a second bowl mix the breadcrumbs, grated cheese and chopped basil;
